The
piece Assimilation by Shishir Kurup
discusses a monologue about immigration. In the beginning scenes, Fat Family, the character sees a fast
food chain of Arby when they first came to America. They never saw Statue of
Liberty, which is symbolic of the immigrants’ experience with freedom and
America. I thought this section was interesting. The author explores the topic
of food justice within urban cities. The main character is perplexed by “the
concept of convenient or fast food… Indian food is neither convenient nor fast”,
cooking cultural food was a long process.
Applying
food justice theory, often times, poor urban areas lack accessibility to get fresh
groceries, the funds to pay for it, and/or, lack the time to cook the food.
Even with Cal fresh, there are limits in what items a person can person. So
instead of having grocery stores, fast food chains would be concentrated in
these areas and selling unhealthy meals for a cheaper price. This systematic discrimination
towards poor immigrants demonstrates the injustice and challenges the notion of
the American Dream.
